The underground cellars of Canelli, or Wine Cathedrals, are aboslute unique underground cellars declared U.N.E.S.C.O. heritage.
The experience starts with a welcome aperitif where you’ll meet one of the actors who will accompany you through this wonderful journey made of misteries, family affairs, and of course the explanations about the different winemaking methods, during an about two hours pleasant walk.
All cellars are close to each other, so it’s not necessary to move by car.
Canelli Cathedrals are real monuments dug out of the sandstone. Inside you’ll find several barriques for the refinement of fine red wines and imposing rooms, with long corridors characterized by large vaults and numerous pupitres, where takes place Spumante fermentation in bottle. The silence of this place will let you feel the sound of remuage done by hand.
You will also get to know how Asti Spumante Metodo Classico is made, one the most important wines of this part of Monferrato.
At the end of the guided tour, you’ll enjoy a traditional lunch or dinner in a peculiar tavern with a testing of Monferrato wines.
